The Madrid Community is located in the centre of the Iberian Peninsula and extends from the Central Mountain Range to the Tagus River Valley. The property is situated near the town of Campo Real, at an altitude of nearly 800 meters. It is approximately 25 acres, just under half of which are planted to grapes. The vines are planted in and around the bed of the Terciario River, in rugged, sandy limestone mixed with clay. The rest of the property comprises pines, cedars, red oak, almond trees, walnut trees and olive trees, some more than 200 years old.
All the grapes are harvested by hand. After manual sorting, the grapes go through a destemmer to removed stalks, then into temperature-controlled stainless steel fermentation vats. Fermentation is carried out at 28C and the maturation process lasts between 15 and 20 days. The wine is cleaned via decanting, causing as little stress as possible.
